Seeded sage and cheddar wafers

Ingredients

2 tablespoons Sesame seeds
2 tablespoons Poppy seeds
3 tablespoons Chopped fresh sage; or 1 tablespoon dried
cup Unbleached all-purpose flour
½ teaspoon Cayenne
½ pounds Sharp white cheddar cheese; 1/2-inch cubes
1 Stick unsalted butter; cut into tablespoon pieces

Date: Tue, 20 Aug 1996 13:07:04 -0500 Toast sesame seeds in medium skillet over medium-low heat until golden brown, shaking skillet continuously (takes about 15 minutes). Transfer to large bowl; stir in poppy seeds, sage, flour and cayenne. Chop cheese in food processor with metal blade until very fine. Add flour, seasonings mixture and butter; process until dough forms ball. Transfer dough to lightly floured surface. Roll into 12-inch log. Chill dough in refrigerator 30 minutes. Cut dough into ⅛-inch slices and place on baking sheet.

Preheat oven to 400 degrees and bake wafers until golden brown around edges, 10 - 12 minutes. Yield: about 5 dozen.
