Shrimp sausage

2 pounds

Ingredients

Quantity Ingredient
4 Feet small hog casings
pounds White fish fillet, cubed
1 Egg, beaten
1 teaspoon Onion powder
1 teaspoon Sweet paprika
1 teaspoon Lemon juice
2 tablespoons Chopped parsley
½ pounds Tiny shrimp, cleaned*

Directions

*If using canned shrimp, rinse very well under cold running water to get rid of the tinny taste.

Prepare casings. Process fish just until broken in food processor. Add remaining ingredients except shrimp. Process until well blended.

Transfer to mixing bowl and mix in shrimp. Stuff casings and tie off into 3-4" links.
