Simple cod fillets with buttery crumb topping+

Ingredients

Quantity Ingredient
cup Lowfat milk
1⅓ pounds Thick Cod fillets, 1 to 1 1/2 inches thick
cup Low-fat cracker crumbs (you can use unsalted saltines or stoned wheat crackers)
1 teaspoon Dried parsley flakes
¼ teaspoon Salt
tablespoon Melted margarine or butter

Directions

1. Preheat the oven to 450 degrees F. Pour the milk into a 1½-quart shallow baking dish (like a gratin.) Add the fish.

2. combine the cracker crumbs, parsley, and salt. Evenly distribute across the top of the fish.

3. Drizzle the margarine or butter over the crumbs. Place the fish in the preheated oven and bake for 12 to 17 minutes or until the fish is done.
