Slow-cooked green beans

Ingredients

2 | pounds | String Beans |
2 | Slabs Bacon cut through rind at 1/2\" intervals | |
4 | tablespoons | Bacon Fat Or Vegetable Oil |
1 | tablespoon | Red Wine Vinegar |
1 | Clove Garlic -- minced | |
¼ | teaspoon | Oregano |
1½ | teaspoon | Savory |
1 | teaspoon | Sugar |
1 | teaspoon | Salt |
dash | Cayenne Pepper |
Directions
Wash the beans and place on top of the bacon in a saucepan. Barely cover with water. Add the other ingredients, except the salt and cayenne pepper. Simmer, partially covered, at least 1 hr, until the liquid has almost evaporated. Add salt and cayenne pepper to tatse, stir, cover again, and simmer a few mins, until the water has completely evaporated. Serve the same or the following day.
Serves 6-8.
