Smoked turkey muffins

1 | teaspoon | Minced fresh garlic |
2 | tablespoons | Vegetable oil |
½ | cup | Chopped fresh mushrooms |
1 | cup | Orange juice |
1 | each | Beaten egg |
4 | ounces | Chopped smoked turkey about 3/4 cup |
1½ | cup | Flour |
½ | cup | Uncooked quick rolled oat |
½ | cup | Shredded provolone cheese |
2 | tablespoons | Dark brown sugar |
2 | teaspoons | Baking powder |
¼ | teaspoon | Salt |
Directions
Preheat oven to 425 degrees. Prepare 12 cup muffin pan by spraying each cup lightly with vegetable cooking spray. Saute green onion and garlic in oil until soft about 2 minutes. Add mushrooms and cook until soft, about 1½ minutes. Cool slightly; do not drain. Combine orange juice and egg in large mixing bowl. Stir in turkey, vegetables and any remaining oil. Combine flour, rolled oats, cheese, sugar, baking powder and salt. Pour liquid ingredients all at once into dry ingredients; stir just until moistened. Do not overmix. Divide the batter evenly into prepared muffin pan, about 1/ 4 cup batter in each muffin cup. Bake at 425 degrees for 20-25 minutes or until golden brown. Remove to cooling rack immediately and cool thoroughly.
Refrigerate until ready to serve.
