Soy bean dip with olive & lemon garnish

Ingredients

8 | ounces | Soy beans, soaked |
6 | tablespoons | Olive oil |
2 | larges | Onions, chopped |
2 | tablespoons | Olive oil |
3 | tablespoons | Lemon juice |
5 | tablespoons | Lemon juice |
1 | teaspoon | Liquid sweetener |
Salt, to taste | ||
3 | tablespoons | Parsley, chopped |
1 | teaspoon | Paprika |

GARNISH
DIP: Rinse the soy beans, cover with fresh water & cook for 2 hours or until soft. Drain & set aside. Heat the oil in a pan & saute the onions until soft, 5 minutes. Put the onions & oil in a blender with the cooked beans, lemon juice, sweetener & salt. Blend until smooth. Transfer the dip to a serving bowl.
GARNISH: Mix all the ingredients together & trickle the mixture over the dip. Serve immediately.
VARIATION: Use chick peas instead of the soy beans.
