Special herbed olive oil

Ingredients

Quantity Ingredient
6 Fresh rosemary branches
6 Whole black peppercorns
3 Garlic cloves, split
3 Bay leaves
2 Fresh thyme branches
2 Long sprigs fresh oregano
Olive oil

Directions

Place herbs and seasoning in 1-quart glass bottle. Add olive oil almost to fill. Cap. Store in cool, dark area for 10 days to infuse before using.

Use in vinaigrettes, as a baste for barbecued fish, poultry, and in marinades.
