Special sweet potato-nut bread

Ingredients

Quantity Ingredient
3⅓ cup All-purpose flour
cup Sugar
cup Mashed cooked sweet potatoes or pumpkin1
½ cup Vegetable oil
teaspoon Baking powder
1 teaspoon Salt
1 teaspoon Ground cinnamon
1 teaspoon Ground nutmeg
1 teaspoon Vanilla
3 Eggs
½ cup Drained crushed pineapple
¾ cup Chopped nuts
1 cup Miniature marshmallows

Directions

Heat oven to 350. Grease bottoms only of 2 loaf pans, 8½ x 4 ½ x 2 ½ inches. Mix all ingredients except pineapple, nuts and marshmallows in large bowl with spoon until blended. Stir in remaining ingredients. Spoon into pans; spread evenly. Bake 60 to 65 minutes or until toothpick inserted in center comes out clean and loaves are golden brown. Cool 10 minutes; remove from pans to wire rack. Cook completely before slicing. Yield: 2 loaves.
