Speck with fresh tomatoes and mozzarella

Ingredients

Quantity Ingredient
½ pounds Thinly sliced speck; see note or
; prosciutto
2 Ripe; juicy tomatoes
4 ounces Ball whole-milk mozzarella
6 Pitted green olives; quartered
8 Fresh basil leaves; shredded, up to 10
Salt; to taste
¼ cup Extra-virgin olive oil
Freshly ground black pepper; to taste

Directions

1. Arrange the slices of speck on serving dishes.

2. In a small bowl combine the tomatoes, mozzarella, olives, and basil.

Season lightly with salt. Add the olive oil and mix everything well. Spoon this mixture loosely over the speck, season with a few grindings of pepper, and serve.

NOTE: Speck is a smoked ham that is a specialty of the Trentino-Alto Adige region in northeastern Italy. It is available at many Italian markets or specialty food shops.
