Spenser's green apple, onion and carrots

Ingredients

Quantity Ingredient
2 Or 3 Garlic Cloves -- finely chopped
1 medium Bermuda Onion -- sliced in 1/8\" rings
2 tablespoons Butter Or Margarine
1 cup Apple Cider
2 mediums Carrots -- julienned 2\" x 1/4\"
2 Granny Smith Apples -- sliced in 1/8\" wedges

Directions

1. In a skillet over med-high heat, saute the garlic and onion in the butter or margarine until translucent.

2. Add ½ cup of the apple cider and the carrots and bring to a vigorous simmer. Cook for 5 mins. Add the apples and simmer for about 1 minute, then add the rest of the cider. Simmer for another 5 mins, then serve hot.

This is particularly good with pork. Makes 3 to 4 servings.
