Spenser's green apple, onion and carrots

Ingredients

2 | Or 3 Garlic Cloves -- finely chopped | |
1 | medium | Bermuda Onion -- sliced in 1/8\" rings |
2 | tablespoons | Butter Or Margarine |
1 | cup | Apple Cider |
2 | mediums | Carrots -- julienned 2\" x 1/4\" |
2 | Granny Smith Apples -- sliced in 1/8\" wedges |
Directions
1. In a skillet over med-high heat, saute the garlic and onion in the butter or margarine until translucent.
2. Add ½ cup of the apple cider and the carrots and bring to a vigorous simmer. Cook for 5 mins. Add the apples and simmer for about 1 minute, then add the rest of the cider. Simmer for another 5 mins, then serve hot.
This is particularly good with pork. Makes 3 to 4 servings.
