Spicy chickpea patties

Ingredients

1 tablespoon Olive oil
1 Onion; chopped
240 grams Carrots; finely diced
2 teaspoons Ground cumin
1 teaspoon Harissa; up to 2
2 cans Chickpeas
3 tablespoons Parsley
60 grams Breadcrumbs
1 Egg; beaten

Directions

Heat the oil and add the onion until golden. Add the carrot and cook a further 2 minutes, stir in the cumin and harissa. Mash the chickpeas in a bowl or blend them in a food processor until well mashed. Mix in the onion and carrot mix, the parsley, breadcrumbs and egg.

Divide and shape the mix into approximately 8 patties. Chill until required.

To cook the patties, place a heavy base pan on to the heat, or place on a lightly oiled baking sheet.

Cook for 7-10 minutes, turning occasionally until golden.
