It is untried. I got it from the Five Roses Flour Recipe Cooking Collection.
In a med. saucepan melt ¼ cup butter over low heat. Stir in ¼ cup flour and ⅛ tsp pepper. Gradually stir in 1 cup half-and-half. cook over moderate heat, stirring, until thickened. Add two 10-oz packages frozen chopped spinach, cooked, and 1 cup grated Swiss cheese. Cook, stirring, until cheese melts. Spoon mixture onto crepes, and roll up.
