Spinach and onions in yogurt

Ingredients

3 | tablespoons | Olive oil |
2 | mediums | Onion(s), chopped (abt 2 1/2 cups) |
2 | larges | Garlic clove(s), minced |
10 | ounces | Pkg fresh spinach stems removed leaves coarsely chopped |
8 | ounces | Carton plain yogurt |
Directions
Heat oil in heavy large skillet over medium-high heat. Add onions and garlic and saut until golden brown, about 10 minutes. Add spinach and saut just until wilted, about 2 minutes. Transfer mixture to large bowl. Cool slightly. Add yogurt to spinach mixture and stir to blend.
SEason to taste with salt and pepper. Serve warm or at room temperature.
