Quantity | Ingredient | |
---|---|---|
½ | cup | Egg substitute |
6 | tablespoons | Flour |
10 | ounces | Frozen chopped spinach; thawed and drained |
2 | cups | Fat-free cottage cheese |
2 | cups | Fat-free shredded Cheddar cheese |
½ | teaspoon | Pepper |
½ | teaspoon | Onion powder ( we like about 1/2 cup chopped onion!) |
Directions
From The Fat Free Living Super Cookbook by Jyl Steinback Preheat oven to 350 degrees. Lightly spray a 9x13-inch baking dish with nonfat cooking spray. In a large bowl, combine egg substitute and flour and mix until smooth. Add spinach, cottage cheese, Cheddar cheese, pepper, and onion powder and mix well. Pour into prepared pan and bake in preheated oven 45 minutes. Let stand 10 minutes before cutting. This can be made ahead of time, refrigerated or frozen and reheated in oven before serving.
Serves 16.
