Spinach madelaine

Ingredients

Quantity Ingredient
2 packs Frozen spinach; copped, thawed, drained
2 tablespoons Butter; (up to 4)
2 tablespoons Flour
1 can Evaporated milk (or more; usually more)
1 cup Grated pepper jack cheese; (I use two) (up to 2)
1 small Onion; chopped
Extra hot stuff; green chiles, salsa, hot pepper sauce, whatever you like
Sometimes mushrooms; about 8 oz. sliced and sauted or other veggies
Buttered bread crumbs

Directions

Saute onion in butter. Add additional butter and make a white sauce with the flour and evaporated milk. Add cheese. When the cheese is melted, add spinach and any other veggies or mushrooms you like. Put in a casserole and cover with bread crumbs. Bake at 350 until hot and crumbs are slightly browned.
