Spinach madelaine

2 | packs | Frozen spinach; copped, thawed, drained |
2 | tablespoons | Butter; (up to 4) |
2 | tablespoons | Flour |
1 | can | Evaporated milk (or more; usually more) |
1 | cup | Grated pepper jack cheese; (I use two) (up to 2) |
1 | small | Onion; chopped |
Extra hot stuff; green chiles, salsa, hot pepper sauce, whatever you like | ||
Sometimes mushrooms; about 8 oz. sliced and sauted or other veggies | ||
Buttered bread crumbs |
Directions
Saute onion in butter. Add additional butter and make a white sauce with the flour and evaporated milk. Add cheese. When the cheese is melted, add spinach and any other veggies or mushrooms you like. Put in a casserole and cover with bread crumbs. Bake at 350 until hot and crumbs are slightly browned.
