Ingredients

4 | slices | Bacon; cut into 1\" pieces |
2 | packs | (10 oz each) frozen chopped spinach |
1 | can | (10 1/2 oz) condensed cream of mushroom soup |
1 | can | (4 oz) sliced mushrooms; drained |
2 | Eggs; slightly beaten | |
⅓ | cup | Dry bread crumbs |
Directions

Cook bacon until drisp; drain. Cook spinach according to directions on package; drain. Combine bacon, spinach, soup, mushrooms, eggs and bread crumbs. Pour into a greased 1½ qt ring mold. Bake at 350 for 25 minutes.
Loosen edges of mold with a spatula. Place serving plate over top of mold, invert into plate. Fill center with mashed potatoes. makes 8 servings.
