Spinach stuffed red peppers

2 mediums Sweet red peppers
2 ounces Finely chopped onion
2 cloves Garlic; crushed
1 ounce Butter or margarine
quart Chopped spinach; (284 g)
4 ounces Cream cheese; cubed
2 ounces Unsalted sunflower seeds
1 teaspoon Lemon juice
1 dash Tarragon; crushed
1 dash Salt
1 dash Pepper

Directions

Clean and halve peppers. Place in greased baking dish. Saute onion and garlic until onion is transparent. Add spinach and cook until moisture evaporates. Remove from heat. Mix in cheese, seeds, lemon juice, and seasonings. Fill each pepper half with spinach mixture. Cover and bake 30 min at 360F/180C.
