Split pea fritters

3 | cups | Yellow split peas |
½ | cup | Cilantro, fresh, minced |
½ | teaspoon | Salt |
1 | each | Onion, diced |
1 | each | Or 2 jalapenos, chopped |
1 | each | Lemon, in wedges |
Directions
Rinse the peas, drain, add water to cover and soak overnight. Drain them and puree in a food processor or blender. Transfer to a bowl and add onions, cilantro, peppers and salt. Using your hands, mix and make little balls or flat patties. Deep fry until golden brown and drain on a paper towel lined plate. Serve with lemon wedges or garlic and vinegar sauce.
