Split pea fritters

Ingredients

Quantity Ingredient
3 cups Yellow split peas
½ cup Cilantro, fresh, minced
½ teaspoon Salt
1 each Onion, diced
1 each Or 2 jalapenos, chopped
1 each Lemon, in wedges

Directions

Rinse the peas, drain, add water to cover and soak overnight. Drain them and puree in a food processor or blender. Transfer to a bowl and add onions, cilantro, peppers and salt. Using your hands, mix and make little balls or flat patties. Deep fry until golden brown and drain on a paper towel lined plate. Serve with lemon wedges or garlic and vinegar sauce.
