Split pea puree

4 cups

Ingredients

Quantity Ingredient
¼ cup Olive oil
1 cup Onion, chopped
cup Water
cup Split peas (about 12 ozs.)
Capers

Directions

Heat oil in a large Dutch oven over medium heat, add chopped onion.

Saute 5 minutes, add water and split peas. Bring to boil and then reduce heat. Cover and simmer until peas are very soft and falling apart, about 1 hour. Uncover and simmer until reduced to abpout 4 cups, stirring often, about 1 hour. Season with salt & pepper. Serve warm or room temperature. Top with capers or crumbled feta cheese.
