Steak with madeira basil and olives

4 | Sirloin or fillet steaks; 125g (4oz) - 175g | |
; (6oz), seasoned | ||

3 | tablespoons | Madeira or brandy |
1 | 200 millilit half fat creme fraiche | |
1 | tablespoon | Black olives; pitted and finely |
; chopped | ||
1 | 15 grams pac basil; roughly chopped |
Directions
Heat the oil in a large frying pan over a moderate heat.
Place the seasoned steaks into the hot pan, cook the steaks for 2½ minutes on each side - rare; 4 minutes each side - medium; 6 minutes each side - well done.
Remove the steaks from the pan, cover with foil and keep warm.
Add the Madeira to the pan and cook for 1 minute. Stir in the creme fraiche, olives and basil.
Pour the sauce over the steaks. Notes:
Serve the steaks with lyonnaise potatoes and crisp green vegetables.
