1 | large | Sirloin or Bottom Butt Roast, 3 Lb or larger |

Directions
Preheat oven to 500 degrees. Cut slits in roast and insert cloves of garlic (I use about 4-5 small cloves on a 3 # roast), season roast with pepper.
Place roast in oven, fat side up and roast for 5 minutes per pound. Turn off oven and let rest WITHOUT OPENING OVEN DOOR for 2 hours. Turn oven to one of the following settings and roast as desired.
½ hour @ 200 for Rare
½ hour @ 300 for Medium 1 hour @ 300 for well done.
NOTES : Notes: I usually do first baking for about 7 minutes per pound.
Second about 45 minutes on 300. This gives me a Medium/well done roast, but not dry. If it is too rare for your tastes, just pop it back in the oven for a while longer.
