Stefen's melon and jicama salad

Ingredients

2 cups Melon; in large dice
2 cups Jicama; in large dice
½ Red onion; minced
1 Orange; juice and grated zest of
1 Lime; juice of
1 Jalapeno; seeded and finely minced
1 teaspoon Mustard
½ cup Olive Oil
Salt
Pepper
Lettuce Cups

Directions

Combine melon, jicama and red onion. Whisk together citrus juices, zest, jalapeno, mustard and olive oil. Season to taste with salt and pepper. Toss and let sit for 1 hour. Serve in lettuce cups.
