Stew (cozido a portuguesa)

2 pounds Beef shin
½ pounds Bacon
2 quarts Boiling water
2 pounds Potatoes; pared
1 pounds Carrots; scraped
1 pounds Turnips; pared
1 large Cabbage; quartered
1 Smoked sausage; sliced
2 cups Rice

Add meat and bacon to water. Cover. Simmer for 2 Hours. Add vegetables.

Simmer for 15 minutes. Add sausage. Simmer until vegetbales are tender.

remove 4½ cups broth from stew. Bring to boil. add Rice. Cover. Simmer for 30 minutes. Drain stew; Pour broth into soup bowls. Place meat on Platter. Surround with vegetables. Serve with rice.

6 servings. Suggested menu: Portuguese stew, escarole salad, garlic bread, peach cobbler, coffee or tea.
