Stir-fried chicken and mushrooms

Ingredients

2 tablespoons Peanut Oil
4 Cloves Garlic; minced
1 tablespoon Fresh Ginger; minced
1 Whole Chicken Breast; skinned, boned and cut into strips
8 ounces Mushrooms; sliced
1 Jalapeno Chile; minced
4 Green Onions; sliced
2 tablespoons Soy Sauce
Steamed Rice

Directions

Heat oil in wok or heavy large skillet over medium-high heat. Add garlic and ginger and cook until golden, stirring constantly, about 30 seconds. Add chicken, mushrooms and jalapeno and cook until chicken is cooked through, stirring constantly, about 5 minutes.

Remove from heat. Mix in onions and soy sauce. Serve with rice.
