Ingredients

1 | large | Tomato; diced |
1 | Half cucumber; diced | |
1 | tablespoon | Purple onion; minced |
1 | Clove garlic; minced | |
1 | teaspoon | Fresh basil; minced (or more to taste) |
Pepper and chili powder to taste (I used a shake or 2 of each) | ||
1 | tablespoon | Seasoned rice wine vinegar |
1 | teaspoon | Soy sauce (reduced sodium) (up to 2) |
½ | teaspoon | Or less sesame oil |
Directions
Mix all together. Delicious as is, or can refrigerate for an hour to let flavors meld. I tasted it and couldn't stop-ate the whole thing!! This was a great light lunch, and very refreshing taste. If you really like spicy veggies, increase the chili powder and maybe add a dash of hot sauce.
