Surimi~spinach & cannellini bean casserole

Ingredients

1 Large onion,finely chopped
3 Cloves garlic,minced
4 teaspoons Ground cumin
2 teaspoons Olive oil
1 pounds Crab surimi chunk seafood
2 15 oz can cannellini beans
10 ounces Pkg. chopped spinach,thawed
1 Red bell pepper,cut in strip

Directions

In a 2½ quart casserole,combine onion,garlic,cumin and olive oil;mix well.Do not cover.Microwave for 4 minutes.Add surimi,drained beans,spinach and bell pepper;toss gently to combine.Cover with lid or vented plastic wrap.Stirring midway through cooking,microwave on high 5 to 6 minutes or until thoroughly heated.Let stand 3 minutes.
