Sweet and savoury mushroom salad

45 millilitres Red wine vinegar
450 grams Button or small closed cup mushrooms
175 grams Vegetarian double Gloucester cheese; cubed
1 200 gram pac washed and ready to eat mixed

50 grams Pine nut kernels; toasted
2 Crisp dessert apples; cored and sliced
; into wedges

Directions

TO SERVE

1. Whisk grapeseed oil and vinegar in a bowl. Pour over mushrooms. Cover and leave to marinate for about 2 hours.

2. Stir in remaining ingredients and toss lightly together.

3. Serve with granary rolls.
