Mushroom and cheese salad

Ingredients

Quantity Ingredient
½ pounds Very crisp, fresh white mushrooms
Juice of 1/2 lemon
cup Swiss cheese, cut into strips
3 tablespoons Olive oil
Salt and pepper to taste

Directions

Remove stems and save for another recipe. Wipe caps clean and slice.

Add the lemon juice to mushrooms and toss to coat to prevent blackening. Add strips of the swiss cheese and toss with olive oil, salt and pepper. Origin: Great Food Without Fuss. Shared by: Sharon Stevens, July/95.
