Sweet potato balls

Ingredients

Quantity Ingredient
3 cups Sweet Potatoes; Cooked, Mashed
¼ cup Butter
¼ cup Brown Sugar
2 tablespoons Milk
¼ teaspoon Salt
½ teaspoon Orange Rind; Grated
16 Marshmallows; Large
1½ cup Cornflakes; Crushed

Directions

1. Mash sweet potatoes with other ingredients.

2. Shape about ¼ cup of this mixture around a regular size marshmallow.

3. Than roll in crushed cornflake crumbs.

4. Put balls in greased baking dish and bake at 350 degrees for 20 minutes, or until marshmallows begin to ooze out.
