Sweet potato flan from malaga

1½ | pounds | Golden sweet potatoes |
¾ | cup | Sugar |
¼ | cup | Pedro Jiminez; sweet sherry |
½ | cup | Milk |
½ | cup | Cream |
4 | Eggs | |
1 | teaspoon | Cinnamon |
Directions
Preheat oven to 350 degrees. Butter a 9-inch flan or dish. Bake potatoes until soft, about 1¼ hours. Allow potatoes to cool. Peel and place in a food processor with sugar, sherry, milk, cream, eggs and cinnamon and blend until smooth. Pour into prepared dish. Place in oven and bake at 350 degrees for 45 to 50 minutes, or until firm. Remove, chill and serve. This recipe yields 4 servings.
