Tabouli with fresh mint

Ingredients

2 | cups | Water; boiling |
2 | Tomatoes; seeded, finely diced | |
1 | bunch | Scallions; sliced |
3 | teaspoons | Fresh mint leaves; chopped |
2 | cups | Fresh parsley; finely chopped |
½ | cup | Lemon juice |
¼ | cup | Olive Oil |
Black Pepper; freshly ground, to taste |
Directions
Cost: $- Preparation Time: 15 minutes Difficulty Level: 2 Servings: 8 as a side dish 1. Place uncooked bulgur in a bowl; pour boiling water over it and let it soak 1 hour (stir occasionally).
2. Drain well in a fine strainer.
3. Return bulgur to the bowl and add all other ingredients; mix well.
4. Chill for 2 hours.
