Classic mint tabouli salad

Ingredients

1 | cup | Fine bulgur, washed |
2 | cups | Chopped fresh parsley |
1 | cup | Chopped scallions |
½ | cup | Fresh mint, chopped |
½ | cup | Lemon juice |
1 | teaspoon | Allspice |
1 | pinch | Salt |
½ | teaspoon | Pepper |
½ | cup | Olive oil |
6 | Tomatoes, cut into small pieces | |
Lemon slices, for garnish | ||
1 | Head Romaine lettuce, washed, broken up |
Directions
1. Soak bulgur in cold water for 3 hours 2. Drain bulgur; mix with remaining ingredients, except for lemon slices and Romaine lettuce.
3. Arrange lettuce on a large salad platter. Scoop tabouli salad into the center of the platter, on top of the lettuce. Garnish with lemon slices and serve.
