Tahini-miso sauce

1 | tablespoon | Oil |
3 | tablespoons | Whole wheat pastry flour |
¼ | cup | Tahini |
1¼ | cup | ;water or vegetable stock |
2 | tablespoons | Miso |
Directions
Heat the oil in a small saucepan. Add the flour and cook, stirring constantly, until the flour is lightly browned and begins to give off a nutty aroma.
Remove the pan from the heat and stir in the tahini.
Add a small amount of water and stir vigorously to form a paste.
Return th epan to the heat and slowly add the remaining water.
Stirring continuously, cook the sauce until the desired consistency is reached. If the sauce is too thick, add a little water.
Remove from the saucepan from the heat and add the miso. Stir well.
Variation:
Saute ½ cup of finely chopped onion in the oil before adding the flour. Mix well and proceed as indicated above.
