Ingredients

2 mediums Onions -- chopped
2 Cloves Garlic -- minced
½ teaspoon Ground Coriander -- .25
¼ teaspoon Paprika
¼ teaspoon Ground Cumin
¼ teaspoon Ground Ginger
teaspoon Thread Saffron -- crushed
1 tablespoon Cooking Oil
3 pounds Broiler Chicken -- cut up
16 ounces Canned Tomatoes -- cut up
1 each Lemon
½ cup Parsley -- snipped
½ cup Olive With Pimento
1 teaspoon Salt

Directions

in a large skillet cook onions , garlic , coriander , paprica ,cumin , ginger , safron , and salt in hot cooking oil until onion is tender but not brown. stir in chicken and undrained tomatoes. transfer mixture to a 3 quart casserole. cover; bake in a 375° oven 1¼ to hours or till chicken is tender. skim off fat quarter lemon length wise and seed. stir lemon parsly and olives into cassarole: heat through.
