Tamarind pulp

11 | ounces | Dried tamarind |
2½ | cup | Hot water |
Directions
Soak dried tamarind overnight in hot water or boil it for 15 minutes over medium heat.
Rub tamarind through your fingers to reduce it to a pulp, then rub through a sieve and collect the pulp. Discard the husks. Excess pulp can be frozen.
