Tofu & rice with vegetables

Ingredients

Quantity Ingredient
1 Onion Sliced
½ Green Pepper Thinly Sliced
½ pounds Mushrooms Sliced
½ pounds Spinach Torn Into Bite-
Sized Pieces
1 cup Mung Bean Sprouts
1 Block Firm Tofu, Cut Into
Cubes
¼ cup Sesame Seeds
2 tablespoons Low Sodium Tamari
4 cups Cooked Brown Rice

Directions

1. Saute Onion and Green Pepper in ¼ C. Water for 10 Min.

2. add Tofu and Mushrooms. Cook An Additional 10 Min.

3. add Spinach, Bean Sprouts, Sesame Seeds and Tamari. Cover and Steam 5 Min. To Wilt Spinach.

4. Mix in 4 C. Cooked Brown Rice. Heat Through and Serve Hot.
