Tofu guacamole

Quantity Ingredient
2 mediums Avocados
¼ cup Onions; chopped
½ pounds Tofu, soft
½ teaspoon Salt
1 medium Garlic clove; crushed
¼ teaspoon Cumin, ground
4 tablespoons Lemon juice
1 large Tomato, ripe; chopped
\N \N Black pepper and cayenne to taste
\N \N Parsley; chopped, for garnish

Mash avocados and add in remaining ingredients. Mash together all but parsley. Leave avocado seed in dip so it doesn't turn brown. Chill dip for 2 hours. Serve cold.
