Tomato and mozzarella salad

Ingredients

6 larges Tomatoes, sliced
8 ounces Mozzarella cheese
3 tablespoons Olive oil
3 tablespoons Red wine vinegar
1 Garlic clove, minced
3 Fresh basil leaves, coarsely
1 Purple onion, sliced (OPT)
12 Whole fresh basil leaves
Chopped
¼ teaspoon Oregano
Pepper

Directions

***DRESSING***

On a bed of lettuce, arrange tomatoes, cheese, onion, if using, and basil. Mix all dressing ingredients together and pour on top. Garnish with sprigs of parsley, if de- sired.
