Tomato salsa - country cooking

Ingredients

Quantity Ingredient
1 tablespoon Vegetable oil
1 small Onion, chopped
1 Clove garlic, chopped
2 larges Ripe tomatoes, chopped
1 small Jalapeno pepper, stemmed, seeded and finely chopped
¼ teaspoon Salt
¼ teaspoon Ground black pepper
3 tablespoons Chopped fresh cilantro leaves

Directions

1. In heavy 2-quart saucepan, heat oil over medium heat, Add onion and saute 5 minutes. Stir in garlic and saute until soft. Remove from heat.

2. Stir tomatoes, jalapeno pepper, salt, and black pepper into onion mixture. Cover and refrigerate 30 minutes to blend flavors, just before serving, stir in cilantro.
