Tomato salsa

Ingredients

7 quarts Tomatoes(peeled and
Chopped)
4 cups Mild green chiles(chopped)
5 cups Onion(chopped)
½ cup Jalapenos(seeded/chopped)
6 Garlic cloves(chopped)
2 cups Lemon juice
2 tablespoons Salt
1 tablespoon Pepper
2 tablespoons Cumin
3 tablespoons Oregano
2 tablespoons Cilantro(chopped)

Directions

Combine all ingredients except cumin, oregano and cilantro in large pot and bring to a boil, stirring frequently. Reduce heat and simmer 10 minutes. Add spices and simmer another 20 minutes, stirring occasionally. Ladle not into clean pint jars, leaving ½" headspace.

Adjust lids and process in boiling water canner for 20 minutes.
