Tomato soup with fresh basil

Ingredients

3 tablespoons Butter or margarine
1 large Onion -- sliced
1 large Carrot -- shredded
4 larges Tomatoes -- seeded and
Chopped
¼ cup Basil leaves
¾ teaspoon Sugar
teaspoon White pepper
14½ ounce Chicken broth
1 tablespoon Small soup pasta
Salt

Directions

Melt butter in a 4 qt pan over medium heat. Add onion and carrot; cook, stirring often, until onion is soft, about 5 minutes. Stir in tomatoes, basil, sugar and white pepper. Bring to a boil over high heat, stirring constantly; then reduce heat, cover and simmer for 10 minutes. In food processor, whirl soup, a portion at a time, until pureed; return to pan and set aside. In small pan, bring broth to a boil over high heat. Add soup pasta; reduce heat to medium and cook just until pasta is tender, about 7 minutes. Stir broth mixture into tomato puree and heat, stirring occasionally, until steaming. Season to taste with salt. 117 calories and 7 grams fat.
