Tortellini, shrimp and pesto salad

Ingredients

Pesto Dressing (recipe follows)
1 pack (9 oz) fresh tortellini *or* 1 pkg (7 to 8 oz) dry tortellini
1 medium Red bell pepper, seeded and sliced into thin, bite-sized strips
6 eaches Ounces tiny cooked and shelled shrimp
Prepare Pesto Dressing, set aside.

Directions

In a 4 to 5 quart pan, cook tortellini in 3 quarts boiling water just until tender to bite (4 to 6 minutes for fresh tortellini; 15 to 20 minutes for dry); or cook according to package directions. Drain, rinse with cold water, and drain well again. In a large bowl, lightly mix tortellini, Pesto Dressing, bell pepper strips, and shrimp. Cover mixture and refrigerste for at least 1 hour or up to 8 hours. Makes 4 servings.

PESTO DRESSING: In blender or food processor, combine: 1 c lightly packed fresh basil leaves (or ¾ c fresh parsley leaves and 2 Tbsp dry basil) 1 large clove garlic, coarsely chopped ½ c grated parmesan cheese 2½ Tbsp red wine vinegar ½ c olive oil Whirl until pureed.
