50 grams Ready to eat apricots; roughly chopped

25 grams Sundried tomatoes in oil; roughly chopped
; (1oz)
3 tablespoons Reduced fat mayonnaise
1 tablespoon Onion; finely chopped
½ teaspoon Madras curry paste/powder
½ teaspoon Lemon juice
1 small Apple; finely grated
1 teaspoon Mango chutney
Salt and freshly ground black pepper

Combine the ingredients for the dressing and mix in with the salad just before serving.
