Tropical fruit medley with anise

Ingredients

⅔ | cup | Unsweetened apple juice |
2 | teaspoons | Cornstarch |
½ | teaspoon | Anise seeds, crushed |
1 | cup | Cantaloupe balls |
1 | cup | Seedless red grapes |
1 | cup | Peeled coarsely chopped ripe fresh papaya |
1 | cup | Peeled coarsely chopped ripe fresh mango |
1 | teaspoon | Brown sugar |
Fresh mint sprigs, (optional) |
Directions
Combine first 3 ingredients in a small saucepan; stir with a wire whisk until blended.
Bring to a boil over medium-high heat, and cook 1 minute, stirring constantly. Remove from heat, and let cool.
Combine cantaloupe and next 4 ingredients in a shallow bowl, and add apple juice mixture, tossing gently. Cover and chill for 1 hour. Yield: 4 servings (serving size: 1 cup). Per serving: 88 Calories; 0g Fat (4% calories from fat); 1g Protein; 23g Carbohydrate; 0mg Cholesterol; 6mg Sodium Serving Ideas : Garnish with fresh mint sprigs, if desired.
