Tuna and caviar parfait

Ingredients

Quantity Ingredient
4 ounces Fresh ahi tuna; finely diced
2 dashes Tabasco pepper sauce
1 tablespoon Finely chopped chives
1 teaspoon Olive oil
Salt and pepper to taste
2 ounces Wasabi tobiko and/or osetra caviar
1 tablespoon Whipped cream; unsweetened
8 Chives

Directions

GARNISH

In a well chilled bowl, mix tuna, Tabasco pepper sauce, chives, olive oil, and salt and pepper together. In a parfait glass, alternate layers of tuna mixture, wasabi tobiko and osetra caviar. Top with whipped cream and two chives.

Yield: 4 appetizer servings
