Turkey and apricot bake

1 | 454 gram pac turkey stir-fry; (1lb) | |
25 | grams | Plain flour; (1oz) |

1 | bunch | Salad onions; chopped |
150 | grams | Ready-to-eat dried apricots; (5oz) |
300 | millilitres | Semi-skimmed milk; (1/2 pint) |
125 | grams | Half-fat matured cheese; grated (4oz) |
40 | grams | Fresh wholemeal breadcrumbs; (11/2oz) |
2 | tablespoons | Freshly chopped parsley |
Directions
1. Preheat the oven to 190 C, 375 F, Gas Mark 5.
2. Coat the turkey strips in seasoned flour.
3. Heat the oil in a saucepan, preferably non-stick, and cook the turkey for 2-3 minutes, stirring continually, until sealed.
4. Stir in the onions and apricots, then add the milk.
5. Cook for a further 2-3 minutes, stirring until thickened and smooth, then stir in 75g (3oz) of cheese and transfer the mixture to an ovenproof dish.
6. Mix together the breadcrumbs, parsley and remaining cheese and sprinkle over the top.
7. Bake in the preheated oven for 15 minutes. For an extra crispy topping, place under a preheated hot grill for 1-2 minutes.
8. Serve immediately with mangetout and baby carrots.
