Vegapple juice

Ingredients

Quantity Ingredient
4 Apples
4 Carrots
2 Parsnips
2 Yellow beets
1 cup Apple juice

Directions

Peel and core apples. Peel and coarsely chop carrots, parsnips and beets.

Place all ingredients in a blender or a food processor and process until smooth. (Add more apple juice if thinner consistency is desired.)

Serve chilled, with ice and a sprig of mint in each glass.
