Very veggie sandwich

Ingredients

Quantity Ingredient
4 tablespoons Cream cheese, or tofu
4 tablespoons Fennel & Three Pepper Relish
8 slices Cucumber
1 Sliced avocado,or less
Lettuce
Sliced tomatoes
Salt and pepper,to taste
4 slices Multigrain bread

Directions

Toast bread, spread both sides with cream cheese or tofu, add Fennel & Three Pepper Relish, layer, cucumbers, tomatoes, avocado and lettuce. Salt and pepper to taste. Serve with fresh fruit on the side. source on the Grapevine- Lesley B. Fay FINE FOODS of SONOMA via (1996)
