Warm exotic mushroom salad

Ingredients

2 Oranges
3 tablespoons Sunflower oil
5 Shiitake mushrooms; stalks trimmed, up
; to 6
8 ounces Chestnut mushrooms; thickly sliced
5 Oyster mushrooms; up to 6
2 tablespoons Sesame seeds
3 ounces Baby spinach leaves

Directions

Peel and segment one orange. Heat oil in a large frying pan. Add shiitake and chestnut mushrooms and cook for 3 minutes. Add oyster mushrooms, cover and cook for a further 2 minutes.

Add sesame seeds and grated rind and juice or remaining orange. Stir in the orange segments and spinach.

Heat through and serve immediately.
