Ingredients

1½ | cup | Flour |
½ | cup | Whole wheat flour |
¼ | cup | Old-fashioned oats |
2 | tablespoons | Yellow cornmeal |
2 | tablespoons | Wheat germ |
2 | tablespoons | Unprocessed bran |
2 | tablespoons | Packed brown sugar |
1 | teaspoon | Salt |
1 | pack | Quick-rise dry yeast |
Directions
Combine all ingredients in a large bowl; stir until well blended.
Store in
an airtight container in a cool place. Give with baking instructions.
Yield: about 2 - ½ cups bread mix, makes 1 loaf bread. To bake bread: Place mix in a large bowl. In a small saucepan, heat 1 cup milk and 2 T. oil until very warm (120 to 130). Add to bread mix; stir until a soft dough forms. Turn onto a lightly floured surface and knead 5 minutes or until dough becomes smooth and elastic. Cover and allow dough to rest 10 minutes. Shape dough into a loaf and place in greased 4 x 8 inch loaf pan. Spray top of dough with cooking spray, cover and let rise in a warm place (80 to 85) 50 minutes or until doubled in size. Preheat oven to 375. Brush top of loaf with a beaten egg. Bake 25 to 30 minutes or until bread is golden brown and sounds hollow when tapped. Serve warm or transfer to wire rack to cool completely.
